Potato Pancakes

5 potatoes, peeled and shredded

2 eggs, beaten

1 onion, finely chopped

3 tablespoons all purpose flour

salt and pepper to your taste

3 tablespoons vegetable oil

Combine the batter into a large bowl, mixing the potatoes, eggs, onion, all purpose flour, salt and pepper, and the vegetable oil. Mix until you have a well mixed batter, and make sure it is all stirred in evenly. Using a spoon, pour spoonfuls of batter onto a hot skillet or flat pan. Flatten with a spatula, and cook until the sides are browned. When they are browned, then flip to bake other side. The perfect potato pancakes for any occasion!
